Golden juicy chicken cutlets served on a plate with lemon and herbs

Ingredients

  • 1 kg (2.2 lb) ground chicken
  • 250 g (about 5 slices) white bread, soaked in milk and blended
  • 1 onion
  • 1 tsp salt
  • Black pepper and ground coriander to taste
  • Butter and a splash of water for finishing

Instructions

  1. Soak the bread in milk, then blend it (leave it fairly moist) and mix into the ground chicken.
  2. Finely dice the onion, sauté in oil until soft, cool, and add to the meat along with the salt, pepper, and spices. Mix well and beat the mixture to bind it.
  3. Pan-fry the patties 3-4 minutes per side. Flip, cover with a lid, and cook 4 more minutes.
  4. Transfer to a baking dish, dot with butter, and add a splash of water.
  5. Bake at 190°C (375°F) for 20-25 minutes.

Tips

  • Keep the bread fairly moist and beat the mixture well, so the cutlets stay juicy and hold together.
  • Do not overcook the patties in the pan — the oven finish with butter and a splash of water keeps them tender.
