Ingredients
- For the layers:
- 250 ml (1 cup) kefir, room temperature
- 80 g (2/3 cup) rice flour
- 20 g (2 tbsp) cocoa powder
- 1 egg
- 1/2 tsp baking soda
- Sweetener to taste (about 2 g)
- Oil for the pan
- For the cream:
- 250 g (1 cup) soft cottage cheese
- 2 tbsp syrup (e.g. Jerusalem artichoke syrup or honey)
Instructions
- For the batter: stir the baking soda into the room-temperature kefir and rest 5 minutes. Add the egg, rice flour, cocoa, and sweetener; mix until smooth and thick.
- Heat an oiled skillet, spread a thin round of batter, and cook about 2 minutes per side. Repeat until the batter is used up.
- For the cream: blend the soft cottage cheese with the syrup until smooth.
- Stack the layers with cream between each. Dust the top with cocoa.
Tips
- Keep the layers thin and even, so they cook quickly and stack neatly.
- Let the kefir reach room temperature and rest after adding the soda, for a light, fluffy batter.
