Ingredients
- 8 chicken thighs
- 3 onions, sliced
- 2 tsp mustard
- 250-350 ml (1-1 1/2 cups) water or broth
- Grated cheese, to taste
- Salt, dried herbs, and garlic to taste
Instructions
- Sauté the onions for 3 minutes. Add the water, mustard, salt, herbs, and garlic. Cover and simmer 10-15 minutes.
- Sear the chicken thighs skin-side down until deeply golden, about 10 minutes total. Salt them.
- Spread the onion sauce in a baking dish, arrange the thighs on top, and shower with grated cheese.
- Bake at 180°C (350°F) for 30 minutes.
Tips
- Pat the thighs dry before searing for the crispiest, deepest golden skin.
- Let the dish rest for a few minutes after baking so the sauce thickens and the cheese settles.
