These lazy egg and cheese patties are a brilliant way to use up hard-boiled eggs. Chopped eggs, green onion, tomato, and grated cheese are mixed with a little flour and pan-fried until golden. They are high in protein, quick to make, and perfect for breakfast or a light lunch.

Ingredients
- 5 hard-boiled eggs, chopped (+ 2 raw eggs)
- 1 bunch green onion, chopped
- 1 tomato, diced
- 100 g (1 cup) grated cheese
- 2-3 tbsp flour
- Salt and pepper to taste
- Oil for frying
Instructions
- Chop and grate all ingredients; mix well. If too thick, add a splash of water.
- Pan-fry spoonfuls in a little oil, 2-3 minutes per side until golden.
Tips
- Keep the mixture thick enough to hold its shape, adding flour a little at a time if needed.
- Use medium heat so the patties turn golden without burning the cheese.
- Drain briefly on paper towels and serve warm with fresh herbs or a simple salad.
