Ingredients
- 1 egg
- 125 g (1/2 cup) soft fat-free cottage cheese
- 30 g (1/4 cup) whole-grain rice flour
- 2 g (1/2 tsp) baking powder
- 2 g vanilla
- Pinch of salt
- Sweetener to taste
- 1 ml coconut oil for frying
- Nut butter (or any filling)
Instructions
- Mix all batter ingredients.
- Heat a skillet over medium heat. For filled fritters, spoon 1 tbsp batter, add 1 tsp nut butter in the center, and cover with another tbsp of batter.
- Cook covered on both sides until golden.
Tips
- Keep the heat at medium, so the fritters cook through without browning too quickly.
- Seal the edges well around the filling, so the nut butter stays inside while cooking.
- Serve warm with fresh berries or a light dusting of cinnamon for extra sweetness.
