This fluffy baked omelet with cottage cheese puffs up golden in the oven and stays wonderfully tender inside — a high-protein breakfast that feels like a treat. Like our Banana Oat Pancakes, it is an easy morning favorite you can make with pantry staples.

Ingredients
- 6 eggs
- 300 ml (1 1/4 cups) milk (2.5%)
- 120 g (1/2 cup) cottage cheese (5%, small curd)
- Pinch of salt
- 8 g butter for the pan
Instructions
- In a bowl, combine the eggs, milk, salt, and cottage cheese. Stir gently with a fork until uniform — no need to whip hard; the key is well-blended yolks.
- Butter a baking dish and pour in the mixture, leaving a little headroom since it will puff.
- Bake at 180°C (350°F) for 30-40 minutes until golden and puffy.
Tips
- Do not open the oven door during the first 20 minutes, or the omelet may deflate before it sets.
- For extra flavor, add fresh herbs or a handful of grated cheese on top before baking. Egg-cooking tips are also covered at Allrecipes.
- Serve it warm with toast and fresh vegetables, or try our High-Protein Cottage Cheese Bagels for another protein-packed breakfast.
