These high-protein cottage cheese bagels are soft, golden, and wonderfully chewy, with no yeast and no long rising time needed. Blended cottage cheese keeps them tender and packs in protein, making them a smart, satisfying breakfast. Toast them, top them with your favorites, and enjoy a bakery-style bagel at home in about half an hour.

Ingredients
- 200 g (3/4 cup) cottage cheese (5%)
- 50 g (1/3 cup) wheat flour
- 30 g (1/3 cup) grated cheese
- 1 egg (separate half a yolk for brushing)
- 1 g (1/4 tsp) baking powder
- 5 g (1 tsp) seed mix
- Salt to taste
Instructions
- Preheat the oven.
- Mix the egg (minus half the yolk), cottage cheese, cheese, flour, salt, and baking powder; knead briefly by hand into a dough.
- Divide into 4 equal pieces (about 85 g each for uniform bagels).
- Shape into bagels on a parchment-lined sheet. Brush with yolk and sprinkle with seeds.
- Bake at 180°C (350°F) for 30 minutes.
Tips
- Keep the kneading brief so the bagels stay soft rather than tough.
- Weigh the dough pieces for evenly sized bagels that bake at the same rate.
