Soft, golden cottage cheese pancakes with a surprise molten chocolate center — these are the breakfast kids ask for again and again, and adults love just as much. They are simple to shape, fry up beautifully, and taste like a cozy dessert served first thing in the morning. For another fluffy morning favorite, try our fluffy cottage cheese pancakes.

Ingredients
- 600 g (1.3 lb) dry cottage cheese (5%)
- 6 tbsp flour
- 2 tbsp sugar
- 2 egg yolks
- Butter and vegetable oil for frying
- Dark chocolate pieces
- Pinch of salt
Instructions
- Press the cottage cheese through cheesecloth.
- Mix with the yolks, sugar, flour and salt.
- On a floured surface roll into a log and divide into portions.
- Press a piece of chocolate into the center of each and roll into balls.
- Fry covered on medium-low heat about 10 minutes per side until golden.
Tips
- Use dry cottage cheese so the dough holds its shape; if it feels wet, press it a little longer before mixing.
- Keep the heat medium-low and the pan covered so the chocolate melts fully without the outside burning — a similar gentle-fry favorite is our banana oat pancakes.
- Serve warm with berries or a dusting of powdered sugar, and see Serious Eats for more pancake technique ideas.
