Ingredients
- 200 g (7 oz) cottage cheese
- 200 g (1 2/3 cups) all-purpose flour
- 200 ml (3/4 cup + 1 tbsp) kefir
- 2 eggs
- 3 tbsp sugar
- 1 pinch of salt
- 1 tsp baking powder
- Oil for frying
Instructions
- Whisk the eggs with the sugar, then add the kefir, cottage cheese and salt and mix well. Stir in the flour with the baking powder.
- Mix until smooth. Fry spoonfuls of batter in a hot oiled skillet until golden brown on both sides. Serve warm — a wonderful breakfast.
Tips
- Do not overmix the batter; a few small lumps are fine and keep the pancakes fluffy.
- Fry over medium heat so the centers cook through while the outsides turn golden.
