Creamy, chocolate-dipped and delightfully light, these no-bake cottage cheese petit cakes are the perfect little dessert for any occasion. Soft cottage cheese and cream cheese are blended with a touch of sweetness, studded with crunchy cookies or nuts, then chilled and dipped in sugar-free chocolate. They look elegant, taste indulgent and need no oven at all.

Ingredients
- 100 g (3.5 oz) cream cheese
- 125 g (4.5 oz) soft cottage cheese
- 30 ml (2 tbsp) milk
- 7 g gelatin + 30 ml water
- Protein cookies or nuts, chopped
- Sweetener to taste
- 100 g (3.5 oz) sugar-free chocolate
Instructions
- Mix the cottage cheese, cream cheese, sweetener and milk. Dissolve the gelatin in the water, warm it and stir into the mixture. Fold in the cookies or nuts.
- Fill molds and freeze 1 hour. Melt the chocolate, dip each cake and refrigerate 30 minutes. Decorate as you like.
Tips
- Blend the cheeses until completely smooth for a silky texture, and chill the molds well before dipping so the chocolate sets in a crisp shell.
