Ingredients
- 500 g (1.1 lb) chicken breast
- 3-4 tomatoes
- Canned mushrooms to taste
- 50 g (2 oz) cheese, grated
- 1 tbsp tomato paste
- 1 tbsp natural yogurt
- Salt to taste
Instructions
- Mince the chicken, shape into a pizza base and bake at 180°C (350°F) for about 15 minutes.
- Spread with the yogurt-tomato paste mixture; arrange the sliced tomatoes and mushrooms; sprinkle with cheese.
- Return to the oven for 20 more minutes.
Tips
- Pat the minced chicken dry before shaping so the base bakes firm rather than soggy.
- Let the pizza rest for a few minutes before slicing so the cheese sets and the base holds together.
- For safe cooking, check that the chicken is cooked through — Serious Eats is a helpful guide to chicken cooking basics.
