Golden baked Dagestani chudu with meat, sliced to show the savory filling

Ingredients

  • 500 g (4 cups + 2 tbsp) flour
  • 350 ml (1 1/2 cups) kefir
  • 50 g (3.5 tbsp) butter
  • 1 egg
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1200 g (2.6 lb) ground meat (any)
  • 1-2 onions, minced
  • Salt, black pepper, ground cumin

Instructions

  1. Stir the soda into the kefir.
  2. Mix the flour, salt and egg; pour in the kefir and knead, working in the soft butter. Cover and rest.
  3. Mix the ground meat with the onion and spices (add fat or ghee if the meat is lean).
  4. Divide the dough into three, roll thin, spread with filling, level and seal the edges. Brush with beaten egg.
  5. Bake at 275°C (525°F) for 15-20 minutes. Brush the hot chudu with butter.

Tips

  • Roll the dough as thin as you can so the chudu bakes crisp rather than doughy.
  • Season the meat generously and let it rest so the flavors meld before filling.
  • Brush generously with butter straight from the oven for a soft, glossy finish. For meat cooking guidance, see USDA and explore more baked dinners at Allrecipes.
