Ingredients
- 500 g (4 cups + 2 tbsp) flour
- 350 ml (1 1/2 cups) kefir
- 50 g (3.5 tbsp) butter
- 1 egg
- 1/2 tsp baking soda
- 1 tsp salt
- 1200 g (2.6 lb) ground meat (any)
- 1-2 onions, minced
- Salt, black pepper, ground cumin
Instructions
- Stir the soda into the kefir.
- Mix the flour, salt and egg; pour in the kefir and knead, working in the soft butter. Cover and rest.
- Mix the ground meat with the onion and spices (add fat or ghee if the meat is lean).
- Divide the dough into three, roll thin, spread with filling, level and seal the edges. Brush with beaten egg.
- Bake at 275°C (525°F) for 15-20 minutes. Brush the hot chudu with butter.
Tips
- Roll the dough as thin as you can so the chudu bakes crisp rather than doughy.
- Season the meat generously and let it rest so the flavors meld before filling.
- Brush generously with butter straight from the oven for a soft, glossy finish. For meat cooking guidance, see USDA and explore more baked dinners at Allrecipes.
