Chocolate Souffle Bars with Glaze

Recipe infographic: Chocolate Souffle Bars with Glaze — ingredients and step-by-step visual guide

These chocolate souffle bars are light, airy and impossibly chocolatey, with a crisp dark chocolate glaze that snaps as you bite in. They feel like a patisserie treat, yet they come together with just a handful of simple ingredients and no baking at all. Chocolate souffle bars with glossy chocolate glaze, served with fresh berries

Ingredients

  • For the filling: 200 ml (3/4 cup + 1 tbsp) light cream (10%)
  • 50 g (2 oz) dark chocolate
  • 10 g gelatin
  • 20 ml (4 tsp) water
  • Sweetener to taste
  • For the glaze: 50 g (2 oz) dark chocolate

Instructions

  1. Bloom the gelatin in the water. Heat the cream to a boil; add the chocolate pieces and stir. Stir the bloomed gelatin into the hot mixture.
  2. Sweeten if you like; mix thoroughly.
  3. Pour into molds (one large mold works — slice after setting — or portioned bar molds). Chill at least 3 hours.
  4. Unmold the souffle; cut into bars.
  5. Glaze: melt the chocolate and dip each bar.
  6. Let the chocolate set.

Tips

  • Use good-quality dark chocolate for the deepest flavor, and let the cream come just to a boil so the gelatin dissolves smoothly.
  • Chill the bars fully before glazing, and work quickly so the glaze sets in a thin, even coat. For more chocolate dessert ideas, see Allrecipes.
  • Serve chilled with fresh berries, and store any leftovers in the refrigerator for up to 3 days.
