These chocolate souffle bars are light, airy and impossibly chocolatey, with a crisp dark chocolate glaze that snaps as you bite in. They feel like a patisserie treat, yet they come together with just a handful of simple ingredients and no baking at all. For more no-bake sweetness, try our Ice Cream Sandwich Cake and Strawberry-Banana Nice Cream.

Ingredients
- For the filling: 200 ml (3/4 cup + 1 tbsp) light cream (10%)
- 50 g (2 oz) dark chocolate
- 10 g gelatin
- 20 ml (4 tsp) water
- Sweetener to taste
- For the glaze: 50 g (2 oz) dark chocolate
Instructions
- Bloom the gelatin in the water. Heat the cream to a boil; add the chocolate pieces and stir. Stir the bloomed gelatin into the hot mixture.
- Sweeten if you like; mix thoroughly.
- Pour into molds (one large mold works — slice after setting — or portioned bar molds). Chill at least 3 hours.
- Unmold the souffle; cut into bars.
- Glaze: melt the chocolate and dip each bar.
- Let the chocolate set.
Tips
- Use good-quality dark chocolate for the deepest flavor, and let the cream come just to a boil so the gelatin dissolves smoothly.
- Chill the bars fully before glazing, and work quickly so the glaze sets in a thin, even coat. For more chocolate dessert ideas, see Allrecipes.
- Serve chilled with fresh berries, and store any leftovers in the refrigerator for up to 3 days.
