Juicy, paprika-rubbed chicken baked over fluffy, savory rice makes this one-dish dinner a weeknight hero: everything cooks together in a single pan, so the rice soaks up all those delicious pan juices. Ingredients
- 1 kg (2.2 lb) chicken pieces
- 2 tsp sweet paprika
- Salt and pepper, to taste
- 1 carrot
- 1 onion
- 1 bell pepper
- 2 garlic cloves
- 400 ml (1 2/3 cups) water
- 300 g (1 1/2 cups) rice
- 10 g (2 tsp) butter
- 10 ml (2 tsp) olive oil
Instructions
- Rinse the rice in cold water 3-5 times. Rub the chicken with salt, pepper, and paprika; marinate 30 minutes, then sear hard on both sides in the olive oil and butter.
- Dice the vegetables; saute the onion first, then the rest. Add the rice and water, season, and arrange the chicken pieces on top. Cover with foil and bake at 180 C (350 F) for 35 minutes. Remove the foil for the last 10 minutes.
Tips
- Rinsing the rice well keeps the grains fluffy instead of sticky, so do not skip those 3-5 rinses.
- Let the chicken rest for 5 minutes after baking so the juices settle before serving.
