Golden one-dish chicken and rice bake fresh from the oven, with crisp chicken pieces over fluffy rice

Ingredients

  • 1 kg (2.2 lb) chicken pieces
  • 2 tsp sweet paprika
  • Salt and pepper, to taste
  • 1 carrot
  • 1 onion
  • 1 bell pepper
  • 2 garlic cloves
  • 400 ml (1 2/3 cups) water
  • 300 g (1 1/2 cups) rice
  • 10 g (2 tsp) butter
  • 10 ml (2 tsp) olive oil

Instructions

  1. Rinse the rice in cold water 3-5 times. Rub the chicken with salt, pepper, and paprika; marinate 30 minutes, then sear hard on both sides in the olive oil and butter.
  2. Dice the vegetables; saute the onion first, then the rest. Add the rice and water, season, and arrange the chicken pieces on top. Cover with foil and bake at 180 C (350 F) for 35 minutes. Remove the foil for the last 10 minutes.

Tips

  • Rinsing the rice well keeps the grains fluffy instead of sticky, so do not skip those 3-5 rinses.
  • Let the chicken rest for 5 minutes after baking so the juices settle before serving.
