This light apple pie is wonderfully airy, gently sweet, and baked in just 20 minutes. Whipped egg whites lift the delicate batter, while thin apple slices turn golden and tender on top. It is the perfect low-calorie dessert for a cozy afternoon tea or a light finish to dinner.

Ingredients
- 40 g rice or wheat flour
- 2 eggs
- 100-150 g apples
- 2 g baking powder (1/2 tsp)
- Sweetener to taste
Instructions
- Peel the apples and slice thinly.
- Separate the eggs and beat the whites to stiff peaks.
- Fold in the yolks, baking powder, and flour until you have a smooth batter.
- Grease a small pan (about 16 cm) and pour in the batter.
- Arrange the apple slices evenly on top, or fold some into the batter.
- Bake at 180°C (350°F) for 20 minutes.
Tips
- Beat the whites until truly stiff so the pie stays light and does not sink.
- Slice the apples very thinly so they soften and bake through in 20 minutes.
- Serve warm with a dusting of cinnamon or a spoonful of yogurt for extra flavor.
