Ingredients
- 2 eggs
- 40-50 g (3-4 tbsp) sugar
- 20 g (1 1/2 tbsp) melted butter
- 100 ml (about 1/3 cup + 1 tbsp) milk
- Pinch of salt
- Pinch of vanilla
- 3 g (1 tsp) lemon zest
- 70 g (about 1/2 cup + 1 tbsp) flour
- 1/2 tsp baking powder
- 5 apples (800 g / 1.7 lb)
- 2 g cinnamon (optional)
- Lemon juice, for the apples
Instructions
- Beat the eggs with sugar until foamy. Add the melted butter, milk, salt, vanilla, and lemon zest. Gradually stir in the flour.
- Slice the apples thinly, toss with lemon juice and cinnamon if using.
- Stir in the baking powder, then gently fold the batter and apples together — or arrange apple slices upright and pour the batter over.
- Bake at 180 C (350 F) for about 60 minutes (19 cm / 7.5-inch pan).
Tips
- Slice the apples as thinly as you can so they soften fully and pack into the pan.
- Do not open the oven early; the pie needs the full bake to set in the centre.
