Ingredients

  • 1.5 kg chicken wings
  • 3 tbsp flour
  • 2 tsp baking powder
  • 1 tsp paprika
  • 1 tsp dried parsley
  • Salt and black pepper

For the sauce:

  • 1 orange
  • Fresh basil or parsley
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1 tsp grain mustard
  • 30 g Parmesan, grated
  • Salt

Instructions

  1. Trim excess skin and bone fragments from the wings if you like.
  2. Toss the wings with the flour, baking powder, paprika, parsley, salt, and pepper.
  3. Arrange on a greased tray or parchment. Bake at 180°C (350°F) for 20 minutes, flip, and bake 20 more minutes until golden and crisp.
  4. Slice the orange and blend with the remaining sauce ingredients.
  5. Toss the hot wings in the sauce and serve immediately.

Tips

  • For the crispiest results, pat the wings very dry and give them space on the tray — crowded wings steam instead of crisping. You can read more about the technique at Serious Eats.
  • Baking powder (not baking soda) helps the skin dry out and crisp up in the oven — do not skip it.
  • Toss the wings in the sauce while they are still hot so the glaze clings, and serve right away while the skin is at its crispiest.
