Ingredients
- 1.5 kg chicken wings
- 3 tbsp flour
- 2 tsp baking powder
- 1 tsp paprika
- 1 tsp dried parsley
- Salt and black pepper
For the sauce:
- 1 orange
- Fresh basil or parsley
- 1 tbsp olive oil
- 1 tsp honey
- 1 tsp grain mustard
- 30 g Parmesan, grated
- Salt
Instructions
- Trim excess skin and bone fragments from the wings if you like.
- Toss the wings with the flour, baking powder, paprika, parsley, salt, and pepper.
- Arrange on a greased tray or parchment. Bake at 180°C (350°F) for 20 minutes, flip, and bake 20 more minutes until golden and crisp.
- Slice the orange and blend with the remaining sauce ingredients.
- Toss the hot wings in the sauce and serve immediately.
Tips
- For the crispiest results, pat the wings very dry and give them space on the tray — crowded wings steam instead of crisping. You can read more about the technique at Serious Eats.
- Baking powder (not baking soda) helps the skin dry out and crisp up in the oven — do not skip it.
- Toss the wings in the sauce while they are still hot so the glaze clings, and serve right away while the skin is at its crispiest.
