Creamy, smoky, and straight from the oven, this baked cream cheese and bacon pasta is comfort food at its easiest — cherry tomatoes roast into a sweet sauce, the cream cheese melts into silk, and crispy bacon brings the crunch. Ingredients
- 140-150 g cream cheese
- 200 g cherry tomatoes
- 150 g bacon, chopped
- 2-3 garlic cloves
- 150 g pasta (dry weight)
- 1-2 tbsp olive oil
- Salt, black pepper, herbes de Provence
- Fresh parsley
- Parmesan to serve
Instructions
- Place the tomatoes, cream cheese, and bacon in a baking dish. Squeeze in the garlic and drizzle with olive oil.
- Season with salt and spices. Bake at 180°C (350°F) for 15 minutes.
- Meanwhile, cook the pasta.
- Mash the baked base well with a fork and add the pasta.
- Toss, then add parsley and Parmesan.
Tips
- Use a block of full-fat cream cheese for the silkiest sauce — low-fat versions can split in the oven.
- Reserve a ladle of pasta water before draining; a splash loosens the sauce if it gets too thick.
- Bake the base until the tomatoes burst and the edges bubble — that is when the flavor is at its best. Allrecipes has plenty of baked pasta inspiration for busy nights.
