This pasta with mushrooms in cream sauce is the kind of weeknight dinner that feels a little bit special without any extra effort. Earthy mushrooms, sweet garlic and a silky cream sauce cling to every strand of spaghetti, and a shower of grated cheese finishes it beautifully. It comes together in one pan in about 25 minutes, making it perfect for busy evenings when you still want something comforting on the table. Ingredients
- 300 g mushrooms, thinly sliced
- 3 garlic cloves
- 300 ml heavy cream (20%+)
- 250 g spaghetti
- 1 tbsp cream cheese
- 1 small onion, chopped
- Salt and black pepper to taste
- Grated hard cheese to serve
Instructions
- Crush the garlic and fry in a mix of vegetable oil and butter until golden, then remove from the pan.
- Fry the chopped onion for a couple of minutes, add the sliced mushrooms, and cook until all moisture evaporates.
- Stir in the cream cheese until melted, then pour in the cream. Season with salt and pepper.
- Simmer on low until the sauce thickens.
- Toss with the cooked spaghetti and serve topped with grated cheese.
Tips
- Slice the mushrooms evenly so they brown at the same rate, and don’t crowd the pan — work in batches if needed for a proper golden sear.
- For the silkiest sauce, stir in the cream cheese off the heat until smooth, and loosen the sauce with a splash of starchy pasta water if it gets too thick.
