Ingredients
- 1 large sheet Armenian lavash (thin flatbread)
- 200 g (7 oz) cottage cheese (5%)
- 2 eggs
- Fresh herbs, chopped, to taste
- Spices to taste
- 200 g (7 oz) hard cheese, grated
- Milk for brushing
Instructions
- Mix the cottage cheese with one egg. Add the chopped herbs, grated cheese, spices and salt, and stir well. Finally beat in the second egg and mix again.
- Cut the lavash into small strips, spread each with the filling and roll up. Brush the end of each roll with milk so it seals and holds together.
- Pan-fry the rolls in a well-heated skillet with a little oil (or none at all), a few minutes per side, until golden and crisp.
Tips
- Brush the end of each roll with milk so it seals tightly and does not unroll in the skillet.
- Use a well-heated skillet so the rolls crisp up instead of steaming.
- Add your favorite herbs and spices — dill, parsley and garlic all work beautifully.
