Baked cabbage steaks topped with beef, mushrooms and melted cheese on a baking sheet

Ingredients

  • 1 head of cabbage
  • 500 g (1.1 lb) ground beef
  • 200 g (7 oz) mushrooms
  • 100 g (3.5 oz) hard cheese or tofu cubes
  • 3–4 tbsp olive oil (for the aromatic oil)
  • 2 garlic cloves, minced
  • 1 tsp dried dill
  • 1 tsp turmeric
  • Salt to taste

Instructions

  1. Cut the cabbage into thick steaks and brush generously with the aromatic oil mixture of olive oil, minced garlic, dried dill, turmeric, and salt.
  2. Top each steak with seasoned ground beef and sliced mushrooms, then sprinkle with grated cheese or tofu cubes.
  3. Bake at 180°C (350°F) for about 30 minutes, until the beef is cooked through and the cheese is melted and golden.

Tips

  • Cut the steaks thick and even (about 2 cm) so they hold together and cook at the same rate as the topping.
  • Pat the cabbage dry before brushing with oil — less surface moisture means better browning. Serious Eats has great guides on roasting vegetables to deep, caramelized perfection.
  • Swap the cheese for tofu cubes to keep the dish dairy-free without losing any heartiness.
