Ingredients
- 1 cup long-grain rice (rinsed)
- 2 cups frozen mixed vegetables
- 1 cup boiling water
- 2 bouillon cubes
- 1 cup light cream (10%)
- 900 g (2 lb) chicken drumsticks
- 2 tbsp mayonnaise
- 2 tbsp all-purpose chicken seasoning
Instructions
- Toss the drumsticks with the mayonnaise and seasoning; marinate 10 minutes. Follow the USDA’s food safety guidance when handling raw poultry.
- In a baking dish, mix the rinsed rice with the vegetable mix. Dissolve the bouillon cubes in the boiling water, add the cream, and pour over.
- Arrange the chicken on top of the rice and bake at 180C (350F) for 1 hour.
Tips
- Pat the drumsticks dry before marinating so the skin browns beautifully.
- Rinse the rice well so the grains stay fluffy rather than sticky.
- Let the dish rest 10 minutes before serving so the rice absorbs the creamy sauce. For more cozy ideas, try our Stuffed Chicken Breast with Mushrooms or browse Allrecipes for easy baked dinners.
