Ingredients
- 360 g (12.7 oz) block cottage cheese
- 1 egg
- 30 g (2 tbsp) rice flour (20 g in the batter, 10 g for dusting)
- Sweetener to taste
Instructions
- Mash the cottage cheese with the egg until smooth. Add the sweetener and 20 g of flour; mix into a fairly firm, barely sticky dough.
- Roll into balls, flatten into patties, and dust with the remaining flour.
- Fry on a dry non-stick skillet for 2-3 minutes per side until golden.
- Serve warm with sour cream, berries, or honey.
Tips
- Use a dry (non-fat) cottage cheese in a block — the firmer texture is key to patties that hold together.
- Dust the patties lightly with flour but do not add too much, or the syrniki will turn dense.
