These cheese-stuffed cutlets are a showstopper: juicy ground-meat patties with melted cheese inside and a whole quail egg baked into the center of each one. They look impressive on the plate, yet the recipe is simple enough for a weeknight — and at 23 g of protein per 100 g, they are as satisfying as they are fun. Ingredients
- 450 g ground meat
- 100 g cheese, grated
- 1 onion
- Fresh herbs
- Salt and spices to taste
- Quail eggs (1 per cutlet)
Instructions
- Chop the onion and fry lightly in vegetable oil.
- Mix the fried onion into the ground meat with the grated cheese, herbs, salt, and spices. Knead well and slap the mixture against the bowl a few times.
- Form cutlets and press a well into the center of each, sized for a quail egg.
- Fry 3 minutes per side.
- Transfer to a baking dish, crack a quail egg into each well, and bake at 180°C (350°F) for about 20 minutes.
Tips
- Slap the meat mixture against the bowl a few times — it helps the cutlets hold together. Allrecipes has plenty of tips for shaping perfect patties.
- Make the wells deep enough that the quail egg sits snugly and does not spill over.
- Serve with mashed potatoes, a fresh salad or pickled vegetables.
