These golden, flaky cheese galettes are everything a cozy weeknight dinner should be: crisp at the edges, molten in the middle, and made from a soft kefir dough that comes together in minutes. Fresh tomato and melted suluguni-style cheese make each bite savory, bright, and deeply satisfying. Ingredients
- 1 egg
- 50 ml (3 tbsp) kefir (1%)
- 150 g (1 1/4 cups) whole-grain flour
- Salt, to taste
- 1/2 tsp baking powder
- 120 g (4 oz) cheese, such as suluguni
- 1 tomato
- 1 egg yolk, for brushing
Instructions
- Beat the egg with the kefir. Add the flour, salt and baking powder.
- Knead a soft dough that does not stick to your hands. Wrap in plastic wrap and refrigerate 30 minutes.
- Divide the dough in two and roll each part out on a floured surface.
- Place the filling (grated cheese and chopped tomato) in the center and carefully fold the edges up. Brush with egg yolk. Bake at 180°C (350°F) for 20 minutes.
Tips
- Keep the dough well chilled so the galettes hold their shape and bake up crisp.
- Pat the tomato dry before adding it, so the filling stays rich rather than watery.
