Ingredients

  • For the apple filling: 4 apples
  • 1 tbsp brown sugar
  • 1 tbsp ground cinnamon
  • 5 g (1 tsp) butter
  • For the sponge: 4 eggs
  • Sweetener to taste
  • 5 g (1 tsp) baking powder
  • 2 tbsp cocoa powder
  • 2 tbsp milk
  • For the chocolate cream: 300 ml (1 1/4 cups) milk
  • 2 tbsp cocoa powder
  • 2 tsp cornstarch
  • Sweetener to taste

Instructions

  1. Peel and dice the apples, then cook in a skillet with the cinnamon, brown sugar, and butter over medium heat for 7–10 minutes, stirring occasionally, until soft.
  2. Separate the eggs. Beat the whites with the sweetener until stiff, glossy peaks form.
  3. In a separate bowl, whisk the yolks with the cocoa powder, baking powder, and milk until smooth.
  4. Gently fold the whipped whites into the chocolate mixture in 2–3 additions with a spatula, using bottom-up motions to keep it airy.
  5. Line a baking sheet with silicone parchment, spread the batter in a thin even layer, and bake at 180°C (350°F) for 5–7 minutes. Do not overbake or the sponge will crack when rolled.
  6. For the cream, whisk the milk, cocoa, cornstarch, and sweetener in a saucepan until lump-free, then cook over medium heat, stirring constantly, until it just comes to a boil and thickens, about 1–2 minutes more after thickening.
  7. Spread the warm chocolate cream over the still slightly warm sponge, top with the apple filling (leaving a small border), and roll up tightly.
  8. Rest for 15–20 minutes to soak, or chill in the fridge for 1–2 hours for cleaner slices.

Tips

  • Do not overbake the sponge — even a minute too long makes it crack when rolled.
  • Roll while slightly warm using the parchment paper to guide a tight, even roll.
  • Chill for 1–2 hours for neat, clean slices that show off the swirl.
