These chocolate-glazed cottage cheese bars taste like creamy ice cream bars but pack a protein punch. Silky blended cottage cheese gets frozen into bars and dipped in a crackly chocolate-nut shell. Ingredients
- 400 g (14 oz) soft cottage cheese (9% fat)
- 50 g (3.5 tbsp) butter, room temperature
- 20 g (2 tbsp) powdered sugar
- Vanilla extract, a pinch
- For the glaze: 100 g (3.5 oz) chocolate
- 50 g (1.7 oz) roasted nuts, chopped
- 40 ml (3 tbsp) refined sunflower oil
Instructions
- Blend the cottage cheese, room-temperature butter, powdered sugar, and vanilla until completely smooth using an immersion blender or mixer.
- Transfer to a piping bag and pipe into molds, or shape the bars by hand. Smooth the tops.
- Freeze for at least 3 hours.
- For the glaze, melt the chocolate with the oil, stir in the nuts, and dip each frozen bar. Let set.
Tips
- Blend the mixture until completely smooth — no lumps should remain.
- Work quickly when dipping so the frozen bars set the chocolate instantly.
- Store the finished bars in the freezer in an airtight container.
