These chocolate-stuffed pancakes hide a delicious secret — a molten chocolate center in every fluffy bite. Made with warm kefir for an extra-tender crumb, they’re quick to mix, fun to cook and impossible to resist. Serve them warm, while the chocolate is still melting, for a breakfast that feels like dessert. Ingredients
- 2 eggs
- 50 g sugar
- 220 g flour
- 1/2 tsp baking powder
- 300 ml kefir (warm)
- 1/2 tsp baking soda
- 100 g chocolate, broken into pieces
Instructions
- Whisk the eggs with the sugar until light and fluffy.
- Add the sifted flour with baking powder, pour in the warm kefir, add the baking soda, and mix until lump-free. Rest the batter 10-15 minutes.
- Pour a little batter onto a dry hot skillet. When bubbles appear, place a piece of chocolate in the center, cover with a little more batter, flip, and fry 1 more minute.
- Cook each pancake covered, 1-2 minutes per side. Serve warm so the chocolate stays molten.
Tips
- Keep the skillet at medium heat and the lid on so the pancakes cook through without burning.
- Use good-quality chocolate that melts smoothly — dark or milk chocolate both work beautifully.
