This tender cottage cheese galette is rustic, golden, and bursting with sweet apricots, with a soft pastry that melts in your mouth. It is a lovely dessert for tea time, much like the Cottage Cheese Khachapuri Boats and No-Bake Banana Cheesecake. Serve it warm or at room temperature, with tea or coffee.

- 70 g (1/3 cup) sugar

- Vanillin
- 180 g (1 1/2 cups) flour

- Chop the apricots into small pieces.
- Divide the dough in two and roll each into a circle.
- Dust the centers with starch, add the apricots, and sprinkle with sugar.
- Fold up the galette edges and brush them with yolk.
- Bake at 180C (350F) for 25-30 minutes until golden.
Tips
- Do not overwork the dough, so the galette stays tender and soft.
- Use ripe but firm apricots so they hold their shape and do not make the pastry soggy.
