Ingredients

  • 80 g (2/3 cup) all-purpose flour
  • 70 ml (1/4 cup + 1 tsp) milk
  • 200 g (7 oz) cottage cheese
  • 4 eggs
  • 1/2 pear, diced
  • Sugar to taste

Instructions

  1. Blend all ingredients except the flour and pear with an immersion blender until smooth.
  2. Add the flour in portions, gently folding with a whisk. Fold in the diced pear.
  3. Pour into a baking dish and bake at 180C (350F) for 30 minutes until golden and set.

Tips

  • Use a ripe but firm pear so the cubes hold their shape while baking.
  • Don’t overbake — the center should be just set and still slightly jiggly when you pull it out; it firms up as it cools. For another fluffy cottage cheese bake, try my fluffy cottage cheese muffins.
  • Serve warm with a dollop of sour cream or a drizzle of honey — or pair it with honey cookies with cinnamon and ginger for a full dessert spread. For more baking inspiration, Allrecipes has a wonderful collection of fruit dessert ideas.
