These honey cookies taste like childhood. Soft, fragrant, and deeply golden, they get their flavor from real honey warmed with cinnamon and ginger — the dough comes together in one pot and the whole kitchen smells incredible while they bake. Cut them into any shapes you like; they stay soft for days (if they last that long).

Ingredients
- 110 g (1/2 cup) butter
- 1 egg
- 210 g (about 2/3 cup) honey
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 430 g (about 3 1/2 cups) all-purpose flour, sifted
- Pinch of salt
- 1 1/2 teaspoons baking powder
Instructions
- In a saucepan, combine the honey, cinnamon, ginger, and salt.
- Warm over medium heat, stirring, until it just comes to a boil. Remove from heat.
- Stir in the baking powder — the mixture will foam up; that is exactly what should happen.
- Add the butter and stir until melted. Let cool to lukewarm.
- Beat in the egg, then add the sifted flour and knead into a soft, elastic dough that does not stick to your hands.
- Roll out to about 7 mm (1/4 inch) thick and cut out shapes with cookie cutters.
- Bake at 180°C (350°F) for about 10 minutes, until golden at the edges.
Tips
Do not overbake — the cookies firm up as they cool and should stay soft inside. Dip half of each cooled cookie in melted dark chocolate for an extra treat. Nutrition (per 100 g): 186 kcal | Protein 7 g | Fat 5.9 g | Carbs 27.9 g.
