Ingredients
- 400 g (14 oz) chicken fillet
- 300 g (10 oz) mushrooms
- 200 g (7 oz) pasta
- 5 g butter or oil
- 200 g (3/4 cup) cream (10%)
- 60 g (2/3 cup) soft cheese, grated
- Spices: 1/2 tsp smoked paprika, 1 tsp garlic (dried or fresh), 1/2 tsp salt
Instructions
- Boil the pasta until half-done. Dice the chicken and sear about 10 minutes.
- Add the sliced mushrooms and cook the same amount of time again.
- Season, pour in the cream, and bring to a boil. Stir in the grated cheese until melted.
- Add the pasta, toss, and warm everything together a couple of minutes.
Tips
- Do not overcook the pasta at first — it will finish in the creamy sauce.
- Sear the chicken in a single layer so it browns instead of steaming.
- Loosen the sauce with a splash of pasta water if needed, and see Serious Eats for more pasta technique tips.
