Cool, creamy and full of character, this Garlic-Walnut Vegetable Dip blends sour cream with garlic, crunchy walnuts, pickled cucumber and fresh cilantro into a smooth, savoury sauce. It is the perfect partner for a platter of crisp vegetables, and a fresh alternative to heavier dips. Serve it alongside Crustless Chicken Pizza or a colourful Lavash Pizza Roll with Ham and Vegetables for an easy sharing spread.

Ingredients
- 100 g (1/3 cup + 1 tbsp) sour cream (10%)
- 2 garlic cloves
- 10 g (1 tbsp) walnuts
- 25 g (1 oz) pickled cucumber
- 2 g fresh cilantro
- 1 g mixed peppers
- 15 g (1 tbsp) soy sauce
Instructions
- Finely chop the garlic, walnuts, cucumber and cilantro.
- Combine with the sour cream, soy sauce and spices; mix until smooth. Serve with fresh vegetables.
Tips
- Chill the dip for 20-30 minutes before serving so the garlic and walnut flavours meld.
- For a smoother dip, chop the walnuts very finely or pulse them briefly before mixing.
- Adjust the soy sauce to taste — a little goes a long way, as in many sauces featured at Serious Eats.
