Silky, savory, and endlessly versatile — this creamy mushroom sauce turns a handful of simple ingredients into restaurant-level comfort. Spoon it over chicken like our Chicken in Creamy Mushroom Sauce, or toss it with pasta for a weeknight version of our Creamy One-Pan Chicken Mushroom Pasta.

Ingredients
- 250 g (9 oz) button mushrooms
- 1 onion
- 300 ml (1 1/4 cups) heavy cream (25% fat)
- 2 tbsp soy sauce
- 40 g (3 tbsp) butter
- Salt and pepper to taste
Instructions
- Chop the onion and sauté in the butter until golden.
- Finely slice the mushrooms, add to the onion, and cook for 5 minutes.
- Pour in the cream, add salt, pepper, and soy sauce, and stir.
- Simmer, stirring, until the sauce thickens.
- Remove from the heat, cover with a lid, and let it rest for 10 minutes before serving.
Tips
- Slice the mushrooms evenly and give them space in the pan so they brown instead of steaming — browning builds the deep flavor. Serious Eats’ guide to better sauces at seriouseats.com has more great technique tips.
- Don’t skip the 10-minute rest: the sauce thickens as it stands and the flavors meld together beautifully.
- Soy sauce is the secret umami boost here, but add it gradually and taste — a little goes a long way. For a heartier main with the same flavors, try our Chicken in Savory Mushroom Sauce.
