These crispy phyllo rolls are impossibly crunchy on the outside and soft, savory, and cheesy on the inside. Filled with a blend of ricotta and mozzarella, sour cream, and fresh herbs, they fry up golden in minutes. Serve them hot for breakfast or as a crowd-pleasing snack.

Ingredients
- Phyllo dough sheets
- 100 g (3.5 oz) ricotta or feta cheese
- 100 g (3.5 oz) mozzarella, grated
- 2 eggs
- 1 tbsp sour cream
- Fresh herbs, chopped
- Salt and black pepper to taste
- Oil for frying
Instructions
- Grate one egg and the mozzarella. Combine with the ricotta (or feta), sour cream, chopped herbs, salt, and pepper.
- Place filling on phyllo sheets and roll into tubes (brush edges lightly with beaten egg to seal).
- Fry in hot oil on both sides until crisp and golden. Drain on paper towels.
Tips
- Keep phyllo sheets covered with a damp towel while you work so they do not dry out and crack.
- Do not overfill the rolls — a thin line of filling rolls up crispiest.
- Seal the edges well with beaten egg so the cheese does not leak into the oil.
