Ingredients
- 2 packs (about 400 g) block cottage cheese (9% fat)
- 3 eggs
- Pinch of salt
- Sugar, sweetener, or honey, to taste
- 60 g (1/4 cup) sour cream or yogurt
- 60 g (1/4 cup) starch
- Vanilla, to taste
- Thawed berries
- Oil for the pan, plus 1 tbsp semolina or flour for dusting
Instructions
- Blend all ingredients until smooth.
- Oil the pan and dust with semolina. Pour in the batter and arrange the berries on top (drain and pat them dry first).
- Bake at 180 C (350 F) for 25-30 minutes. If your oven browns strongly from below, place a water-filled pan on the lower rack.
- Cool completely in the pan before slicing.
Tips
- Pat thawed berries very dry so the bake sets cleanly instead of turning soggy.
- Resist slicing while warm: cooling in the pan gives clean, creamy slices.
