Ingredients
- 2 overripe bananas
- 2 eggs
- 2 tbsp vegetable oil
- 90 g (3.2 oz / 1 cup) ground rolled oats
- 1 tsp cinnamon
- 1 tsp baking soda, quenched with vinegar or lemon juice
- 2 apples, sliced
Instructions
- Blend the bananas smooth with an immersion blender.
- Add the eggs, quenched baking soda, cinnamon, vegetable oil, and ground oats; mix well.
- Pour into muffin cups, top each with apple slices, and bake at 180 C (350 F) for 20-25 minutes.
Tips
- Use very ripe, well-spotted bananas for the sweetest flavor and moistest crumb.
- Do not overmix once the oats are added, so the muffins stay tender rather than dense.
- Let the muffins cool in the pan for a few minutes before moving them to a rack. For more muffin-baking guidance, see Allrecipes and Serious Eats.
