Ingredients
- 200 g (7 oz) ground meat
- 1 onion, chopped
- 1 carrot, diced
- 1 liter (4 cups) water
- 1 can (400 g) canned beans, drained
- 2 bay leaves
- 200 ml (3/4 cup + 1 tbsp) cream
- Salt, spices, and fresh herbs to taste
- Oil for frying
Instructions
- Saute the chopped onion and carrot in a little oil. Add the ground meat and cook with the vegetables until browned.
- Season with salt and pepper, pour in the water, add the drained beans and bay leaves; simmer about 5 minutes.
- Stir in the cream, bring just to a boil, and turn off the heat.
- Let the soup rest a few minutes before serving; garnish with fresh herbs.
Tips
- Brown the meat well — those caramelized bits are where the deep flavor comes from.
- Rinse canned beans to cut excess sodium and keep the broth clear.
- Stir the cream in off the boil to keep it silky. For another creamy bowl, try our Silky Cream of Broccoli Soup or Roasted Pumpkin Coconut Soup.
