Ingredients
- 6-8 medium potatoes
- 300 g (10.5 oz) ground meat
- 1 onion, finely chopped
- 1 tsp paprika
- 1 tsp dried garlic
- 3 tbsp sour cream
- 3-4 tbsp tomato sauce
- Salt and black pepper to taste
- Fresh herbs
- Water as needed
Instructions
- Wash and peel the potatoes, then hollow out the centers (a melon baller or special knife works well).
- Mix the ground meat with the onion, salt, paprika, dried garlic, and herbs.
- Stuff the potatoes with the meat mixture and pack them into a pot along with the scooped-out centers.
- In a bowl, whisk the sour cream, tomato sauce, and enough water to make a pourable sauce.
- Pour over the potatoes and simmer over medium heat about 40 minutes.
- Sprinkle with fresh herbs before serving.
Tips
- Choose potatoes of similar size so they cook evenly, and do not hollow them too thin or they may fall apart.
- Pack the stuffed potatoes snugly in the pot so they stay upright and cook in the sauce, not in steam.
- The sauce should just cover the potatoes; add water sparingly. For another meat-and-sauce classic, try our Juicy Beef Meatballs in Tomato Sour Cream Sauce.
