They make a fantastic party snack or weeknight dinner side.
Ingredients
- 500 g (1.1 lb) puff pastry or samsa dough
- 350 g (12 oz) beef, finely chopped
- 50 g (1.75 oz) lamb tail fat (kurdyuk) or beef fat, diced
- 3 onions, finely chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cumin (zira)
- 1 egg yolk
- 1 tbsp milk
- Sesame seeds, for topping
Instructions
- Mix the beef, diced fat, onions, and all the seasonings in a bowl until well combined.
- Roll out the dough, cut into squares, spoon filling into the center of each, and seal into triangles.
- Flip each turnover seam-side down, brush with the egg yolk and milk wash, and sprinkle with sesame seeds.
- Bake at 190°C (375°F) for 25 minutes, until deep golden. Rest a few minutes before serving.
Tips
- Keep the dough cold and work quickly so the pastry stays flaky. The baking guides at Allrecipes have great pastry pointers.
- Seal the edges firmly — a little water on the rim helps them stay shut in the oven. For more on working with spiced fillings, the technique articles at Serious Eats are excellent.
