These patties are everything a weeknight dinner should be: juicy, golden, high-protein, and on the table without fuss. Grated zucchini keeps the ground chicken impossibly moist, while a hot sear and a gentle oven finish lock in the juices. Fans of patties should also try our Chicken, Corn & Cheese Patties.

Ingredients
- 1 kg (2.2 lb) ground chicken
- 1 onion, grated
- 1 small zucchini, grated and squeezed dry
- Salt and pepper
Instructions
- Combine the ground chicken, grated onion, and zucchini; season with salt and pepper.
- Knead and slap the mixture, then shape into patties with wet hands.
- Sear on very hot heat about 1 minute per side; finish in a 150°C (300°F) oven for 20 minutes, then rest before serving.
Tips
- Squeeze the zucchini really dry — excess moisture is the enemy of a good sear.
- Slap the mixture against the bowl a few times; it tightens the protein so the patties hold together without breadcrumbs. For more zucchini inspiration, try our Light Zucchini Fritters with Dill.
- Unsure how hot is hot enough for searing? USDA food-safety guidance covers safe internal temperatures and handling for ground poultry.
