This rustic potato pie is pure comfort food. Layers of thinly sliced potatoes, melted cheese and cream bake under a golden puff pastry crust until rich, tender and irresistibly savory. It is a simple, hearty dinner perfect for cold evenings and family tables.

Ingredients
- 2 sheets yeast-free puff pastry
- 1 kg (2.2 lb) potatoes, peeled and thinly sliced
- 2 eggs
- 100 ml (1/3 cup + 1 tbsp) heavy cream (20%)
- 1 onion, thinly sliced
- 200 g (7 oz) cheese, shredded
- 3 sprigs parsley, chopped
- 2 tbsp flour
- Salt and pepper to taste
Instructions
- In a large bowl, whisk the eggs with the cream, salt and pepper. Add the sliced potatoes, onion, cheese, parsley and flour; toss to coat evenly so the filling is not too runny.
- Roll out the puff pastry. Line a baking dish with parchment and fit in the first sheet, letting the edges overhang.
- Add the filling, fold the edges toward the center, cover with foil and bake at 180 C (350 F) for 1.5 hours. Remove the foil for the last 30 minutes so the top turns golden.
Tips
- Slice the potatoes as thinly as possible so they cook through evenly.
- Let the pie rest for 10 minutes before slicing so the filling sets.
- Brush the top with a little extra cream before the final uncovered bake for a deeper golden color.
