Lavash Envelopes with Cottage Cheese and Cheese

Recipe infographic: Lavash Envelopes with Cottage Cheese and Cheese — ingredients and step-by-step visual guide

These golden lavash envelopes are crisp on the outside and soft, cheesy and herby inside — a quick breakfast or snack that feels a little special without any fuss. Cottage cheese keeps the filling light and protein-rich, while grated cheese melts into every fold. They pair beautifully with a fresh salad or a cup of tea, and for more easy morning ideas try the Egg and Turkey Breakfast Sandwich and Fluffy High-Protein Cottage Cheese Pancakes.

Golden crisp lavash envelopes filled with cottage cheese, melted cheese and fresh herbs

Ingredients

  • 400 g (14 oz) cottage cheese (5% fat)
  • 2 eggs
  • 100 g (3.5 oz) cheese, grated
  • Fresh dill, parsley or green onions, chopped
  • Lavash (thin flatbread)
  • Salt and pepper to taste
  • A little oil for frying

Instructions

  1. In a bowl, combine the cottage cheese, eggs, grated cheese and chopped herbs.
  2. Season with salt and pepper and mix well.
  3. Spread the filling over the lavash.
  4. Fold into neat envelopes.
  5. Pan-fry in a little oil on both sides until golden and crisp.

Tips

  • Do not overfill the lavash, or the envelopes will be hard to fold and may leak in the pan.
  • Place the envelopes seam-side down first so they seal as they crisp.
  • Serve at once for the best crunch, with sour cream or fresh herbs. For more flatbread inspiration, see Serious Eats.
