This lavash omelet wrap is breakfast in a hurry — fluffy eggs, sautéed mushrooms, ham and melted cheese, all folded into a crisp-edged wrap. It is as cozy as our Cheesy Lavash Rolls and as quick as our Ham and Egg Crepe Wrap, and it travels well for busy mornings. For a make-ahead option, bake a batch of our Savory Egg Muffins for the week.

Ingredients
- 1 lavash or tortilla
- 2 eggs, beaten
- 60 g cheese, grated
- 60 g ham, diced
- 80 g mushrooms, sliced
- 2 green onions, chopped
- 1 tsp vegetable or olive oil
Instructions
- Slice and fry the mushrooms in a drop of oil.
- Pour the beaten eggs over the mushrooms and immediately cover with the lavash.
- Once the omelet sets underneath, flip the whole thing.
- On one side, arrange the ham, green onions, and grated cheese.
- Fold the other half over and serve hot.
Tips
- Keep the heat moderate so the eggs set gently and the lavash crisps without burning.
- Warm the lavash for a few seconds before folding so it bends without cracking.
