These lazy cottage cheese dumplings are the coziest kind of breakfast — soft, tender and ready in minutes. Poppy seeds soaked in warm milk add a gentle nuttiness, while the dumplings themselves stay light, fluffy and full of protein. Serve them warm with a spoonful of sour cream, jam or honey for a breakfast that tastes like childhood. Ingredients
- 200 g cottage cheese
- 1 egg
- 2 tbsp sugar
- 40 g flour (plus extra for dusting)
- 1/3 tsp salt
- 1 tbsp poppy seeds
- 2 tbsp milk
Instructions
- Soak the poppy seeds in hot milk for 10-15 minutes.
- Mix the cottage cheese, egg, sugar, salt, flour, and the drained poppy seeds.
- On a floured surface, roll the dough into a rope about 2-2.5 cm thick and cut into diamonds.
- Drop into boiling water, stirring gently off the bottom. Cook 1 minute after they float to the surface.
Tips
- Use dry, well-drained cottage cheese so the dough holds together without extra flour.
- Don’t overcook the dumplings — lift them out a minute after they float for the softest texture.
