These lemon garlic marinated roast chicken drumsticks are bright, savory and burnished to perfection — the kind of dinner that makes everyone ask for the recipe. A simple lemon, garlic and paprika marinade does most of the work, and a final blast of high heat gives the skin irresistible color and flavor. Ingredients
- 1 kg (2.2 lb) chicken drumsticks
- Olive oil
- Juice of 1 lemon
- 2 tbsp tomato paste
- 1 handful cilantro or parsley, chopped
- 8 garlic cloves, minced
- 2 tsp sweet paprika
- 2 tsp lemon pepper
- Salt to taste
Instructions
- Make the marinade and pour over the chicken, reserving 3-4 tbsp.
- Marinate 1 hour in the fridge — overnight is even better.
- Roast at 180°C (350°F).
- After 40 minutes, brush with the reserved marinade, crank the heat to max, and roast 10-15 more minutes until done and burnished.
Tips
- Marinate overnight when you can — the lemon and garlic flavor goes much deeper into the chicken.
- Keep the reserved marinade separate from the raw chicken marinade so you can brush it on safely at the end.
